Bahamian Conch Salad

Ingredients:

  • 2 pounds fresh conch meat, cleaned and diced
  • 1 cup diced tomatoes
  • 1 cup diced green bell pepper
  • 1 cup diced red bell pepper
  • 1 cup diced cucumber
  • 1 cup finely chopped red onion
  • 1-2 diced hot peppers (Scotch bonnet or jalapeño)
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup freshly squeezed lime juice (about 4-5 limes)
  • 1/2 cup freshly squeezed orange juice (about 1-2 oranges)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Conch: Start by tenderizing the conch meat with a meat mallet or the back of a heavy knife until it’s slightly flattened. Dice the conch into bite-sized pieces.
  2. Mix the Salad: In a large bowl, combine the diced conch, tomatoes, green and red bell peppers, cucumber,  onion, hot peppers.
  3. Add the Citrus: Pour the lime juice and orange juice over the salad, and mix well to combine. The citrus juices will help tenderize the conch and add a refreshing tang.
  4. Season to Taste: Season with salt and pepper to taste. Mix everything thoroughly.
  5. Chill and Serve: Cover the bowl and refrigerate the salad for at least an hour before serving. This allows the flavors to meld together beautifully.
  6. Enjoy: Serve chilled as a refreshing appetizer or a light main course.
